Seasoned generously with a thick, crunchy coating of Parmesan cheese and garlic breadcrumbs, this is one fish dish that everyone is sure to love. Great for a quick and flavorful Friday night dinner during Lent - it's on the table in under 15 minutes.

Ingredients
  • 2 firm, white fish fillets, skin off (about 5 oz. each)
  • 2 tbsp. Dijon mustard
  • Olive oil
  • Salt and pepper
Crumb Mixture
  • 1/2 cup panko breadcrumbs
  • 1 tbsp. fresh parsley, finely chopped
  • 1/3 cup fresh Parmesan cheese, finely grated
  • 1 garlic clove, minced
  • 1 tbsp. olive oil
  • Pinch of salt and pepper
How to Cook:
  • Preheat oven to 375°F
  • Combine the crumb mixture ingredients and mix well to combine.
  • Sprinkle both sides of fish with salt and pepper, then spread the mustard on the top of each fillet (top only).
  • Press the mustard side of the fish into the crumb mixture. Press down firmly so it will stick. Then drizzle with olive oil so the mixture gets crispy when it cooks.
  • Brush a baking sheet with olive oil and lay the fillets (crumb side up) in the pan.
  • Bake for 10 – 12 minutes, then finish under the broiler on high for 1-2 minutes to make the crumb topping golden.

Serve immediately with lemon wedges and enjoy!
