Cod Puttanesca

Ingredients for Puttanesca Sauce

  • 1 tbsp Olive Oil
  • 2 tbsp Onions, diced
  • 1 tbsp Garlic, chopped
  • 1 cup Tomatoes, diced
  • 1/3 cup Tomatoes, crushed
  • 5 tbsp Capers
  • 2 tbsp Black Olives, chopped
  • 1/3 cup Vegetable Stock
  • 2 tsp Basil, chopped
  • 1 tsp Oregano, chopped
  • 1 tsp Parsley, chopped

Ingredients for Cod

  • 6/6oz portions of Codfish
  • 2/3 cup of Vegetable Stock
  • 2 cups of Puttanesca Sauce

Method of Preparation for Puttanesca Sauce

  1. Heat oil in a sauce pan, sauté onions and garlic.
  2. Add tomatoes, capers, olives and vegetable stock and simmer.
  3. Add fresh herbs.

Method of Preparation for Cod Puttanesca

  1. Coat fish with oil and place in a pan with vegetable stock.
  2. Roast in pan for 5 minutes.
  3. Add Puttanesca sauce and continue to bake until proper internal temperature is 145ºF.
