Ingredients for Puttanesca Sauce
- 1 tbsp Olive Oil
- 2 tbsp Onions, diced
- 1 tbsp Garlic, chopped
- 1 cup Tomatoes, diced
- 1/3 cup Tomatoes, crushed
- 5 tbsp Capers
- 2 tbsp Black Olives, chopped
- 1/3 cup Vegetable Stock
- 2 tsp Basil, chopped
- 1 tsp Oregano, chopped
- 1 tsp Parsley, chopped
Ingredients for Cod
- 6/6oz portions of Codfish
- 2/3 cup of Vegetable Stock
- 2 cups of Puttanesca Sauce
Method of Preparation for Puttanesca Sauce
- Heat oil in a sauce pan, sauté onions and garlic.
- Add tomatoes, capers, olives and vegetable stock and simmer.
- Add fresh herbs.
Method of Preparation for Cod Puttanesca
- Coat fish with oil and place in a pan with vegetable stock.
- Roast in pan for 5 minutes.
- Add Puttanesca sauce and continue to bake until proper internal temperature is 145ºF.
